[Deprecation Notice] PingSource v1beta2 API removal in 0.28

Folks,

The PingSource v1beta2 API will be removed in 0.28 after 9 months of the promotion to v1. There is no API change between v1 and v1beta2 so upgrading to the new version is just a matter of updating the resource apiVersion to sources.knative.dev/v1
