Anyone have an idea why this only works in Google Earth?

What doesn't it work in?
Having a guess, have you seen -
http://code.google.com/apis/kml/documentation/kmlelementsinmaps.html#notes
perhaps your 5 second refresh interval is too short

Looks like I have run into the same issue as you, although the
documentation says that style updates are supported in Google Maps it
seems that mine only work in Google Earth (not maps) so I think the
documentation may be wrong.
I am still waiting for someone to correct me.
