Importing CSV/Excel files into Google Earth....

I'm trying to find a way to import some large csv files (or excel
files, I can use either) into Google Earth (.kml or .kmz). I'd like
to change the color (and possibly size) of the icon depending on one
of my columns of data, and have the points connected (route). My data
encludes a good number of columns (lat, long, name, value I'd like the
color to be based on, description columns) and I'd like to include
them all in the pop up box for each point. The website below is the
best I've found so far, but I'm really trying to find one that I could
use while offline, or that has open source code so I can adjust it.

For starters, try this (http://earth.google.com/outreach/
tutorial_mapper.html) link. This is Google's easy-to-use spreadsheet
tool, and that will get you most of the way there. I think the only
thing you won't be able to do is make a LineString (a 'route') out of
individual placemarks, but you can certainly colour-code your points
and group them into folders, which might be just as good.

Off the top of my head, I can't think of any web-based tools to make
the routes. If you're willing to do a little coding, though, it can be
easily accomplished.
