I was at a conference recently that covered some online books projects
and portals to sources. While they're not precisely teaching tools,
they are still helpful to students when they are conducting research.
So, I thought I'd share.

Some projects that were mentioned:

American Memory

Google Book Project

"Million Books" Project

Abraham Lincoln Book Collection

Portals to freely available Full-Text E-Books:

Internet Archive

InfoMINE

OAIster - "Union catalog of digital resources"

The Online Books Page - over 30,000 titles

My Library@OCKHAM

Open Source for Index Data:

Pazpar2: Open Source metasearch software

MasterKey: hosted version, access to Project Gutenbert, OIAster, etc

That sounds like a cool conference Jill! Which one was it? I want to
go to it next time it's held!
