There is at least two applications on the itune app store
deflectouch, a free game (winner of the kivy contest):

It's not an easy process, however, I've not been directly involved in
either upload, but I know you need to test on all the devices you
declare compatible with your app, because you can always have surprises,
(for example there was a few fixes with the retina screens, there is
probably to test with the ipad mini). But it's possible, as with any
framework, or native application, apple validation process is always
uncertain, both in time and result, but testing a lot, assuring yourself
your app doesn't block user interactions, doesn't have crashes, or
things like this, should remove most reasons for apple to refuse your
app.
