Let's see how to make home made lollipops with honey
We will need 1 cup sugar for this recipe, along with 1/4 cup honey and a little bit of lemon juice
We will also need some aluminium foil or parchment paper
We can also make molds out of aluminium foil
Cut a piece of the foil and place it in a small bowl or a mold.
Even bottle caps also could be used to shape the foils.
Simple poke a stick or tooth pick into these foils and lolli pop mold is ready!
Or, just arrange some tooth picks on an aluminium foil and simple pour the prepared mixture onto them
These preparations have to done before hand, since, as soon as we prepare the syrup, we will have to pour it into the molds
Heat pan and add 1 cup sugar, 1/4 cup water and boil
Simmer still the sugar melts and a thick syrup is formed
This can be tested by dropping a little syrup into a bowl of water. If the syrup solidifies completely, then the syrup is ready
We can see that the colour also has changes
Add 1 tablespoon fresh lemon juice, 1/4 cup honey and simmer for 30-40 seconds
We can see that the sugar syrup has darkened
Now cut off the stove
It's time to transfer it into the prepared molds
If the syrup hardens in the process, just re-heat it to make it runny again
If you're using regular molds, spread some ghee on them and pour the syrup
Place a tooth pick and let it cool down completely
Lollipops are ready!
Make sure to keep some distance between the candy so that they don't stick to each other. You could also sprinkle some icing sugar on it to reduce the stickey-ness
