WhatI wanted it for was the ability to connect 4 microphones to my computer via USB, in order to record a podcast where 4 people could be individually miked. I was so concerned about USB driver issues, that I think I did not look into other issues.
What puzzles me is that I can use the 1/4" line-in jacks on channels 1 and 2 and they work fine. So what's the deal with channels 3 and 4? I can clearly see they don't have as many controls and features as channels 1 and 2, but I thought they would at least be able to take a line in from a microphone.
1/4" Jack Inputs don't have a preamp like XLR connections. In other words if your microphone needs power from the mixer you won't get it from a 1/4" socket. To prove a point, try connecting something else at "Line level". Like a CD player and listen to see whether that comes through.

I read the "Multi Channel Recording " section in the FAQ. Not sure from that how to get multi channel recording working on Audacity. It seems this would be a common requirement for Audacity users who have multi channel devices like the ZEDi10.

That all depends on the configuration & capabilities of your mixer/interface. Usually, you would monitor the backing track without re-recording it. The new track(s) It can be mixed-in during post production.
It depends on the hardware drivers.
If the ZEDi has a multi-channel WDM or WASAPI driver, then Audacity should be able to record all 4 channels simultaneously.
If the drivers only provide multi-channel support with ASIO, then you may be better to use a recording application that supports ASIO.

I needed a simple audio-mixer. Nothing fancy just something that allows me to combine/ mix up to 4 stereo inputs and feed them into a home-stereo system. I found a promising circuit over at TheRandomLabs and just went for it.

The laptop runs Audacity and sends out to two different tracks with the same song which I found on my hard drive. One track is sent to the left output, the other track is inverted and sent to the right output.
The idea is to combine the recorded stereo signals back into one mono signal again. If everything goes well the two signals (remember: one was inverted) will neutralise each other and the result will be awkward silence.
