Sorry for the late reply. ASAIK the sheep tallow should not be melted. I've never did this by my own, but I've been told the following method:
1. Separate the tallow from the meat. The tallow forms small balls and they are easily removable.
2. Gather the tallow in a big ball - big enough to hold it easily.
3. The small tallow balls are covered with thin membrane. Remove them by cutting the big tallow ball by cutting it with a knife. Every time you cut the tallow the membranes will be attached to the edge.
Thus you will have tallow that will stay hard on room temperature and you can shape it with your hands.
