gmail accounts

Is there a way to export a staff members emails out so that I can delete her account?  She has left our corporation  but we need to keep her email.

Fire up a pop/iMac mail client like Thuderbird or *gasp* Outlook and download all the mail to a PST or Thunderbird MBOX.
