Setting up the proper time zone on Chromebooks

Has anyone that has deployed Google Chromebooks seen where to set the
timezone on these? Or does this need to be done manually on each
device?

We're setting up our books as I speak and I have not found a global setting, so when we enroll the chromebooks we change the timezone and pointer speed.
I believe there are a few settings like wifi, that need to be set per device but their goal is to have everything user based and not device based. If anyone does see where we can mass change the timezone let us know!

We are moving from a very small test phase of a Chromebook initiative to several carts in the next few weeks.
One issue we have is with DHCP and the way the devices show up.
I have Google around and tried a couple solutions that got me nowhere.
Other than a DHCP reservation by MAC address, is there any way to see a host name from the chromes?
What I have tried is assigning a name from the SSH via the host command.
