Latest version of k9 mail.
Since lollipop 5.1 extremely slow to use : high latency so that k9 is
unusable on nexus 5.
No other apps working.

I have exact same problem: K9 very slow to display messages, scroll through
mailbox etc... almost unusable.
Nexus 5 / Android 5.1.1

I have tried 'long press' on account -> recreate data to no avail.
