Korea to introduce gochujang labels
If you regularly find yourself shaking in your boots because you don’t
know if
the “gochujang” in your dish will send you running to the water cooler
or not,
fear no more. Government officials said yesterday that Korea will
introduce
labeling standards for the popular chili paste by the end of the
month.
Officials with the Ministry of Food, Agriculture, Forestry and
Fisheries,
and the Korea Food Research Institute have come up with a plan to
measure the
degree of spiciness of different kinds of the red pepper paste. The
measurement
system will be referred to as the Gochujang Hot taste Unit (GHU) and
it will be
categorized into five levels from a scale of 0-100. The five levels
are: Mildly Hot,
Slightly Hot, Medium Hot, Very Hot and Extremely Hot for if the GHU
goes over 100.
Agreeing on the new system wasn’t easy, however, as the nation's nine
major
gochujang makers initially couldn’t even seal the deal on a single
unit.
It is hoped that the GHU will offer more choice at home, while also
promoting
“hanshik” abroad.
