You can use egg substitute, low fat mayonnaise and Swiss cheese for a
low cholesterol diet.
Mini Cheese Quiche Recipe. What a fun & easy appetizer for any party
1 cup grated cheddar cheese
3 tablespoons flour
4 eggs
2/3 cup mayonnaise
1 - 10 ounce package chopped frozen spinach, thawed & drained
8 slices bacon, cooked, crumbled
1/4 cup fine chop mushrooms
1/4 cup fine chop onions
2 tablespoons fine chopped black olives
1 teaspoon old bay season
Dash ground pepper
Drain the thawed spinach in a strainer, then press in a paper towel
to remove extra liquid. Cook beacon and drain on a paper towel,
crumble and set aside. In a food processor chop the mushrooms,
onions, & olives, set aside. In a large bowl toss grated cheddar
cheese with the flour. Add 3/4 of the beacon, chopped mushrooms,
onions and the remaining ingredients; mix well.
In a small glass bowl beat eggs and mayonnaise until fluffy. Stir
into spinach mixture, mix well. Spray miniature muffin tins with
cooking spray. Fill cups 3/4's full and sprinkle a pinch of beacon on
top. Bake at 350 degrees for 18 to 20 minutes or until edges are
golden. Makes about 36 mini quiche.
