Potato Skin Poppers
Serves 14
Type of Recipe: Appetizer/Party Food

Preparation Time (min): 20
Prep Tool: Stovetop, Oven

14 Mission� Fajita Size Flour Tortillas
1 (16 oz.) container Sour Cream (divided)
3 cups frozen, diced Potatoes (or hash browns)
2 cups shredded Cheddar Cheese
3/4 cups cooked Bacon pieces
1/3 cups chopped Green Onion
Butter melted
Salt and Pepper to taste

1. Preheat oven to 350� F.

2. Cook potatoes in skillet according to package directions.

3. In a large bowl, stir together cooked potatoes, cheese, 1
cup sour cream, bacon, green onions, salt and pepper.

4. Warm the tortillas according to package directions.

5. Spoon equal amounts of the mixture in the center of the 14
tortillas. Fold in two sides of each tortilla to meet in the middle,
then roll burrito-style.

6. Brush outside of each rolled tortilla with melted butter and
place on baking pan with seam down.

7. . Bake for 12-15 minutes, or until golden brown.

8. Let cool for 5 minutes then cut diagonally into halves.

9. Serve with remaining sour cream.
