Yvonne's Spinach Dip Specialty
Makes about 3 cups

1 package (10 ounces) frozen chopped spinach
1 package (1 ounce) vegetable soup mix and dip (such as Mrs. Grass or Knorr's)
3 green onions (green and white parts), chopped
1 cup (8 ounces) low-fat (1%) cottage cheese (undrained)
1 cup (8 ounces) mayonnaise
Wheat snack crackers
Carrot or celery sticks

Thaw spinach in refrigerator overnight (or under cold running water).

In large strainer or colander, rinse spinach thoroughly with cold water.

Press spinach down firmly to squeeze out all excess water. Place in large
mixing bowl.

Add soup mix and green onions to spinach. Stir until well mixed.

In blender, blend cottage cheese until smooth (consistency of sour cream).

Add with mayonnaise to spinach mixture and stir until completely mixed.

Refrigerate at least 2 hours before serving (or overnight for best results).

Serve with crackers and carrot or celery sticks.
