Dynamically disabling culling

Hi, I've deployed JupyterHub using https://zero-to-jupyterhub.readthedocs.io/en/latest/ which is great, very flexible and easy to manage.
Is it possible to dynamically disable culling for certain running notebooks?
Some users want to run some things overnight sometimes, and be able to safely disconnect the client, but otherwise culling should still be the default behaviour.
