There are very good tutorials on the jPOS.org page, and of course, you also have the jPOS Programmers manual and the jPOS-EE Manual. 

We used to have a free webinar once per month that was an interactive run on the Gateway tutorial but we haven't done it for a while for time constraints. There are also paid webinars that are 3-day intensive training sessions.
