How do you include the PIN block in an ISO 8583 message into a
postilion subhost?

The clear PIN would be encrypted under a key to produce a PIN Block -
this might take place within your acquiring 'device'.
This PIN block will be placed in the appropriate field for the interface
you are acquiring into.
Check the documentation for which field and also the PIN Block format
required.

The key used in producing the PIN Block will need to be negotiated (and
securely exchanged) with the target system owners too.

Looks like you have acquired a transaction with a pin and would like
to forward it to Postilion.

This would mean you would have a key that you shared with the party
that sends you the transaction.

This would also mean you would have a shared key with Postilion.

Now you would do a pin translation using a HSM to translate the
pinblock from what you acquired to the a pinblock encrypted under the
Postilion key. The field to use and its format would be available in
the Postilion message spec.
