I came across this Gmail Plugin called Boomerang for Gmail - http://www.boomeranggmail.com/

I have been using it for the last week and find it fantastic since it allows one to:

1. Schedule your email - To ensure you send it at the most appropriate times (so type it out over weekends but have it delivered in your recipient's mailbox on a Monday afternoon or Tue morning!)

2. Return email to Inbox - You can set up  your email such that if the recipient does not respond in a specified amount of time (number of days) this email "boomerangs" back to the top of your Inbox so that you can follow-up on it - this is the best part since it automates the process of follow-up and one does not need to go searching in the mail for the right message. You can also set up recurring messages

3. Track opens - A feature that was there in Outlook but till date was not there in Gmail is now available through this. Do note however that there will be a line in your mail that will say that the sender has asked for a read request which most people may not like.
