What is the etymology of the Yiddish word Ebeshter?

Superlative of what was ober(e) in Middle High German,
- umlaut and later unrounding (both as opposed to Standard German),
- shift of medial sibilant to sh (regular in this position in Yiddish, as opposed to s in StG),
- elision of r (rather irregular, unless you state a narrow rule).
Also as opposed to StG, the ending -r is kept even when the word comes with the definite article.

The forms אויבערשט or אײֵבערשט (and the derived forms) are normal, and of clear German etymology,
as already shown by Phillip Minden.
Is there really a form with the elision of r ?

In contemporary Haredi Yiddish the [r] is usually omitted: eybishter/aybishter

Elision of "r" takes place in Central (Polish) Yiddish, but not in other dialects – it should be spelled "eybershter."
