Is it possible to archive a directory? (without packaging..)

From the configuration, I see
See the @includes of Ant fileset for the exact format.
So I've attempted to use fileset dir , without sucess
'fileset dir="build" casesensitive="yes"'

Is it possible? Are there examples?

Do you mean archive an artifact? Just use mydir/**/* - and don't use "Flatten" in any jobs that "Copy artifact" from that job.

If you're talking about an empty directory, then I don't think that works. I might be wrong, but I think it only archives files.

I can confirm: Jenkins does not archive empty directories. And that is good.

Is the double "*" the key to getting directories?
And no, I also see no use in getting empty directories.

Yes, **/* matches "any file anywhere under this directory". ** matches any number of directories, so foo, foo/bar, foo/bar/baz, etc all match.
