Is there any way to "hide" daily appointments under the Jello Today
dashboard screen? I want to be able to move tasks around and hide
appointments.

Unfortunately you cannot mark appointments as done yet!
You can check your settings screen for a "Hide Past due items on Calendars" and check it. That's the closest you can get right now.
