Customizing Kie server REST API response.

I am going through KIE server api page and wanted to know if we can customize the response for these services.

Also can you point me to the source code where this is implemented, just to understand how this is implemented.

I know I can use java APIs to create my own endpoints using jBPM and KIE java APIs. Just wanted to understand how this is implement in KIE server.
