Nerv: Nerve
It shows the function of the organization of non governmental agencies.
Seele controls everything that Gehrim and eventually Nerv does, In
Evangelion, the body and it's organs are considered a vessel to the soul, in
such, Seele is the most important structure in the Nerv hierarchy. Gehrim

humanity from the angels. It's Nerv that takes action in the end, just like
nerves that control our muscles that allow us to move, and attack when
provoked.
This is the real deeper meaning of the Organization.
BTW, The Marduk Institute is named after a Babylonian god to which children
were sacrificed to. The risk of death for EVA pilots is very present in the
series.
