Evangelion Redone episodes and other DVD questions

I was wondering if all the Japanese DVD releases of Evangelion contain the
'redone' later episodes with the new footage, or just certain ones? Also,
this Japanese no region 3-DVD set I keep seeing on E-Bay (

episodes, is it official, or a bootleg or what? Is its quality any good?
Mainly, I just want to get my hands on the redone episodes that the ADV U.S.
release didn't have.
