to January 2011 Clean Eating Challenge
Can't believe the 30 day challenge is finally over. There are a lot
of things that I have learned over this period of time, but a few
things really stand out to me. First, clean eating is not death
sentence...you can actually make it quite enjoyable. Through the
clean eating process, being creative was critical in making the
challenge tolerable. Through this, I came across some great recipes
and meals that I can completely see myself continuing to enjoy.

Second, clean eating gives anyone a good reason to cook more
frequently. I must say that I was not much of a "lets find a recipe
and cook a meal tonight" type of guy. But in order to survive this
challenge, taking the time to cook meals, especially dinner is
absolutely critical. I actually enjoyed cooking the meals, and again,
found some very enjoyable meals that met the clean eating criteria.

Lastly, the Paleo diet really works. I lost a good amount of weight,
and currently feel about as good as I have ever felt. It is nice to
enjoy a clean eating diet, albeit a challenge, but to actually see
positive results come from it. This encourages me to continue to make
healthy food decisions, and attempt to incorporate the paleo diet as
much as possible moving forward.

Thank goodness this is over...time to enjoy a well deserved Newcastle
and slice of pizza!
