Fresh water plumbing and sink removal. J/40

I'm thinking of replacing all the vinyl plumbing. It's old and the water does not look pretty.

Likely replacement would be several fixtures and use of PEX tubing and fittings.

I did this on the prior boat and ws happy.

So, it looks like plumbing to the galley sink will be a real challenge unless I can pull the sink.  Anyone done that, or got some other idea?

I “gave up” on Frolic and just cut an access port.  Very happy I did in the end…

Where did you cut the port, on the side there?

Right on the side facing the nav in the middle.  About 6” x 6”.   Gave me access to replace the fixture easily with a nice new Ambassador stainless.  And then I covered it with a starboard “plate” with a screw in each corner.  I barely even notice it.

I went all Pex on Fin/J40.
The only non Pex pieces are the STB side water tank to the valve and the final section of the foot pump. 

I don’t recall having any issues on that project.

Under the sink was not an issue. 

Pex from water heater came up and around the ice box to the faucet.
The cold came under the floor from the valves under the chart table. Then up along the side of the engine to the faucet.
