Dear Students:

Erin and I have noticed that the blog posts on Italian food and recipes need more elaboration and/or background.  If you are treating a recipe, you must do some research around the it.  You must introduce it and add material which might include…not just generalities, but…

Your own experience (with photos) making the recipe, and/or
An in-depth discussion of ingredients, and/or
The history of the recipe and traditions around it, and/or
Information on the region and why this particular recipe might originate there

Please see some Italian food blogs to get an idea of what we mean.  The link below has a number of great blogs you can view.

Also, for some ideas on Italian cuisine that are a bit beyond the proverbial pizza and spaghetti, please see the following sites (or others you might find) for ideas.  You might want to look for recipes from a specific region, or recipes for a specific holiday, or a recipe that includes a certain ingredient that is now in season.

Here are some websites to explore…

http://cucina.corriere.it/cucina-regionale/ (all in Italian, use google translate)
http://www.giallozafferano.it/ (all in italian, use google translate)

Good luck and buon appetito!

Yours, RD
