Same problem here with my cellular iPad 1 (5.1.1 not jailbroken). It does not matter wether I create a new connection or edit an existing one, the app crashes as soon as I flip the switch.

I removed the software and reinstalled as well, made sure task was fully killed, etc.  

Everytime I try to flip mosh support to "on" in a profile, iSSH crashes and exits.

Anything I can do to help provide logs is certainly doable, just let me know

Just to let everyone know, I've been able to replicate and correct this issue. Will be fixed in the next update. Upgrading to iOS 6 does resolve the issue.
 
Now that Google Maps is out, for those that aren't jailbroken it's probably safe to update to iOS 6.
