You can now uninstall Islandora Defaults.

We now have instructions on Islandora Defaults for how to non-destructively uninstall that module from an existing site. See the new 3.x branch (now default on Github).

Please be careful if you have other tools or modules that have dependencies on Islandora Defaults. For example, there is a ticket to remove Defaults from the Islandora Install Profile Demo.  You should probably not follow the uninstall instructions right now if you are using the Install Profile.
