I tested the Solr basic and advanced search in the VM and it seems to
be working. Did you add content with "test" and "fishing" in the
titles? I ask because none of the content included with the VM has
either of those terms in the title.
There are several demo objects included in the VM - there should be
one item in each demo collection. Have you tried searching for any of
these items? I get results back when I search for them.
Solr has been pre-configured on the VM so you shouldn't need to modify
any settings to get it working.

The simple search is configured in a text file on the filesystem. If you go to http://192.168.56.195/admin/settings/islandora_solr_search, you will see a Dropdown menu called "Request Handler." Depending on which version of the VM you have, you may have a long list with lots of options or a shorter one (which I cleaned up) with only a couple of options... Choose either "demo" or "islandora" from the list of request handlers and click "Save" at the bottom of the page and try a search for "PEI" You should get a result, if you have not removed the default objects that I included in the repo.
FYI, the file where the request handlers are defined is: /usr/local/fedora/gsearch_solr/solr/conf/solrconfig.xml (thanks Alan for pointing me to it when I was having trouble with the simple search :-)
