Did you check wether the cluster is overloaded or has other signs of problems (in /var/log/messages)?
The built-in CLI tools a great for live monitoring the traffic and access; have a look at isi statistics client (and … heat) to start with (use options for "top" mode and inclusion of "all nodes").
For the Macs:
Have you enabled "Compute all sizes" in Finder's "View Options" AND have you populated the accessed NAS shares with a huge number of files recently? These together would keep Finder quite busy…
There is a nice doc or White Paper by EMC on best practices for Macs with Isilon, check it out.
