Below is the recipe for April's cooking club. I've had so much fun cooking and eating with you all... thanks for inviting me to the group!!

Goat-Cheese Popovers
Olive or walnut oil OR PAM spray
6 eggs
1 1/2 cups flour
1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp dried thyme
pinch ground nutmeg
2 cups milk
1/2 cup heavy or whipping cream
4 ounces herbed chevre
1. Preheat oven to 400 degrees.
Brush 2 dozen muffin cups with a generous amount of oil, or spray them with a generous amount of PAM.
2. Place the eggs, flour, salt, pepper, thyme, and nutmeg in a blender container. Blend until well combined, about 10 seconds.
3. With the blender running, slowly pour in the milk and cream and blend until smooth. Place the prepared muffin tins in the oven to warm slightly. Remove the warmed tins and fill each halfway with batter. Place a piece of the cheese in the center of each cup. Pour in the remaining batter to fill each cup two-thirds.
5. Bake the popovers until puffed and golden, 40 to 50 minutes. Serve immediately.
Makes 24 popovers.
