I have stored mine on board in sail bag for 20 plus years without incident. My boats have been covered with canvas too. I have never had mice on board - knock on wood!

If the sail is hanging in your basement
1) you will worry much less about your unattended Boat
2) you will worry not at all about your easily checked up[on sail.
Even if you store indoors it would be better to get the canvas into a safe
place.

The sail should be folded properly and rolled up and put in a sail bag. I keep mine in my walk in basement and place Bounce drier sheet around it to repel mice. Leaving the sail on for the winter is a non starter for me and most sailers. I have seen sails stored in the boat but not on it.

Proper winterization of a boat will repay the effort many times in the
spring.
 
The impact of leaving the sail on depends on where the boat is.... and if
it's in the water or on the hard.
 
I've been working this week on winterization tasks, and thinking of the
fun we'll have next season.
