Also, I'd like to be able to rename the existing ones. And delete the ones I don't want any more.

Simples: I deliberately didn't do more than I had to to get this operational! (Lazy so-and-so, I know).

And delete the ones I don't want any more

You can do this by drag-and-dropping a disk image from the LIB: window onto the "Trash Can" widget in the LIB: window title-bar (top left corner).

The other 2 operations you can do are:
  • Drag-and-drop a new disk image into the LIB: window from your local PC file explorer/finder - this is the one everyone should know.
  • Drag-and-drop a disk image from the LIB: window onto the "Download" widget in the LIB: window title-bar to download a disk image from the LIB: to your PC
With these 3 simple (atomic) operations everything else is within your grasp:
  • Want to rename an image: download it to your PC; rename it there; upload it back to the LIB:; delete the original one.
  • Want to create a blank disk: download any existing image to your PC; rename it there to say 'blank.dsk'; upload it back to the LIB:; mount it; do an ERA *.* in CP/M. Blank disk!
The combinations and permutations are endless. Think of it like recipes in Minecraft, then again, maybe better not.
But this simple combination of atomic operations saves a huge amount of work developing features in to the Desktop UI that won't frequently be used.

This reminds me of the early MacOS versions, where you could not create empty folders, you had to duplicate the "Empty Folder" that the system disc contained.
But if you accidently deleted this "Empty Folder", you had ... ... a problem.

But even Apple thought about it and changed that :)

Another way is creating an empty file on your PC with the name you want. Then upload it into the IMSAI
with the Web GUI and boot IMSAI IMDOS. The OS contains a program 'format' for formatting floppy disks.
Attach your new file to an empty drive and format it before usage, as usual.
