[iOS] arm64 simulator architecture excluded from podspec

Hi!

Seems like the latest version (3.22.0) on iOS suddenly excludes arm64 simulator architectures.

Any reason why that is? I see the arm64-x86_64 is properly bundled in the xcframework.

Now simulator builds on arm macs no longer function when they were before.
