My option is :
Install
PDFcreator.or any other which allows similiar or more twaeks.
The options panel can be accesed as follows:(I am not sure if there is a GUI available associated with the make PDF button*
or option in document context menu*.)
"PRINT" the document, select PDFC or PDFCreator as the printer.
Click the printer PROPERTIES tab, and toggle to B&W mode.Done.
remember to revert back to color mode, else we are
done the next time :)

PDF Creator works in background when
commanded in terminal.
Additional junk: PDFCreator is recommended for professionals as well. Is a one-time investment serving simple to advanced use.Some of the PDFconvrtrs in the arena doesnt allow us to twaek image
quality, variable compression of images embedded in the document etc.
U said you want to make legible B&W copies?? its rather laborious sir! We have to load the document in a senior image editor like GIMP. either use Channel wise convertion to B&W, or use a plugin which simulates ORTHO-chromatic or PAN-chromatic processing of color into B&W. Remember some old Merlin Monroe posters having pale white lips but others of the same magnet having dark black ones? its jsut not lipstick :) .Differs based on color transformation schema: RED> BLACK or not.
