The term Flambé [flahm-BAY] is a French word
meaning "flaming" or "flamed." Flambé means to ignite foods that have
liquor or liqueur added. This is done for a dramatic effect and to
develop a rich flavor of the liqueur to the foods without adding the
alcohol. The flames result from the combustion of the flammable
alcohol, which is quickly consumed, subsequently extinguishing the
flames. The dish is served as soon as the flame disappears. The name
Flambé is in support of this style of cooking. With the addition of
Flambé trolleys we bring in new light of interactive experiences within
the restaurant.
