Hopefully, the existing Visible Elements module might meet your needs! It allows you to hide some fields from public users in the ISAD(G) and/or RAD templates. See:

Oh, I see, sorry I misunderstood! 

Unfortunately, AtoM does not currently have that ability, so you would have to develop it. Hopefully the other links I've provided will help you get started.
