Here is the response I received from tech support at MTX.
---------------------------
I have included the ServerEPS hardware and software requirements for your review. Unfortunately, the IBM ACE with the 4690 OS is not included and is thusly not supported.
ServerEPS Hardware Requirements
The OpenEPS Direct method does not require a WinEPS installation or a server PC; an installation of OpenEPS required at each POS lane to provide connectivity to the data centers. If using the Dial Backup Client or FuelEPS, one or more additional PCs may be required.
The Dial Backup Client provides an alternate dial-up connection to the standard high speed internet in case of loss of the primary high speed connection. The FuelEPS install allows fuel lanes to connect to the ServerEPS data centers and process transactions through the same interface as OpenEPS Direct.
If the minimum requirements for the operating system you are using are higher than what is listed below, use those requirements instead.
Hardware Requirements for Dial Backup Client, FuelEPS and OpenEPS
Pentium III (Intel or compatible) 500 MHz processor (1 GHz or faster recommended)
256 MB of RAM (512 MB or more recommended)
VGA, or higher, resolution monitor set at 800 x 600 or better
CD-ROM drive for software installation
Ethernet Card
Ethernet cards on the PC which runs the Dial Backup Client may not be dual-honed (a single NIC card configured to support 2 IP addresses); if 2 IP addresses are required for the machine, each IP address will require its own NIC card.
Drive Space Requirement for OpenEPS on each POS lane:
200 Mb free drive space for configuration files and logs
To utilize signature capture storage and retrieval related services the POS lanes must be equipped with supported touch screen terminals that are capable of capturing signatures.
Drive Space Requirement for Dial Backup Client Server:
100 Mb of free space for program and log files
The Dial Backup software must be installed on a separate PC. It may not be installed on a POS lane or on the same PC that FuelEPS is installed on.
Drive Space Requirement for FuelEPS Server:
50 Mb of free space for program and log files
The FuelEPS software must be installed on a separate PC. It may not be installed on a POS lane or on the same PC that Dial Backup software is installed on.
Software Requirements for OpenEPS (Front POS Lanes)
Always use the latest service pack or certified patch for the operating system that is in use.
TCP/IP, FTP and FTPS Protocols
Any of the following Operating Systems:
Windows 7 (32 bit & 64 bit)
Windows Server 2008 (32 bit & 64 bit)
Microsoft Vista SP1
Microsoft Server 2000/2003 SP 1
Microsoft Windows 2000, SP 4

WePOS
Linux Red Hat 2.7 (only)
Actually, we have different ESP tender providers, based on the BIN number of the card. Our gift cards are sent to a different provider. Credit, debit and EBT normally go to our regular bank.
Once we start supporting WIC, then we will have 58 different authorization interfaces. One for each state, commonwealth and tribal authority. Again the separation will be by the BIN number.
Checks go to a separate authorization server, that supports all of our stores (worldwide).
So, it can be done, just need someone from NRSC to help set it up.
