Extracting data from simulations/Visit to view in Matlab

Hello,
I am having a lot of trouble finding documentation on how to extract spatial and time-series data from the simulations to view in another software apart from Visit.
I have a simulation which outputs flow vector, WSS, pressure, etc data for a vessel geometry and I want to extract quantitative time series data along specific planes so I can compare to spatially matched experimental data. I can make an image in Visit along the plane, but to my understanding, there is no easy way to extract the numerical data pointwise from the image or from the .samrai files with Eulerian coordinate labels/indices.
Has anyone attempted this before and succeeded? If so Can someone please share example code? For reference, I am using the IIM branch.

Yes, we have done that recently. Basically it involves reading the HDF5 files in MATLAB and then extracting the data.
Kaustubh can you send some screen shots of the steps involved to achieve this?
