Does anyone know of a Popeyes location that serves skinless fried
chicken? I had some a while back on a trip to Arkansas, and it was
excellent.

I don't know of any Popeye's that served skinless chicken. Seems to me
that's where the flavor and crunchiness is. By the way... Frenchies is
great chicken, too. Anyone remember "Chicken in the Rough" around the south
years ago? It was served with no utensils and honey on the side.

Oh Yeah! Frenchies is still around and making that same great chicken. I
don't get down there very much since it's off I-45 South, but I had a
coworker who would bring it in with him when he came to work until recently.

He also used to stop and get boudin balls that were excellent! I no longer
work with or know where to contact him to ask, so does anyone know where you
can get those?

The Popeye's skinless chicken I had was wonderful. All of the spicy flavor
cooked straight into the meat, and it still had a great crunchy coating.
One would never know it was skinless, really.

Boudin balls to-go 7 days a week at Burt's Meat Mkt on Lyons Ave. Also,
they've got gooooood gumbo.

Now, I know a few things about Cajun food. But, I didn't know about boudin
balls. I didn't even know boudin was male. What are boudin balls? Also,
is the gumbo made with a real dark roux?

Boudin balls are simply boudin rolled into a ball and deep fried. You can
get them with cheese in the center, but I've not tried those. The others are
really delicious!!!

Thanks Kerr! I'm currently on a quest for great gumbo. I'll have to check
that out.

How does all of that rice stick together without some sort of casing to hold
it?

Don't ask, don't tell. I'm still unsure of what boudin is really made, in
addition to the rice, of course.

I've never made boudin (or boudin balls), and I've only eaten it a few times
myself, but this might give you more information about it:
