I'm not an accountant, but "account" can also mean a 勘定項目, which
might make more sense here than 口座.

We use the expression "shoulder season" for the time just before and just
after "high season." Depending on the actual sentence you are trying to
translate, you could translate "shoulder dates" simply as ショルダーシーズン.
Your suggestion of オフシーズン would be the equivalent of "low season."

production" is a monetary amount, but an actual number of room nights
generated by a hotel salesperson, a customer, a convention, or a
visitor's bureau.
An example of the latter is in this resume, where she says that she
"increased room night production" while working in convention sales
for Tampa.

Companies and conventions use this figure to negotiate better hotel
rates. On-line reservation services use it to show how they can
increase revenues to hotels. Hotel salepersons and sales departments
use it measure their achievements. Hotels and hotel chain also use
it, along with revenues, etc., to measure their results.
Here's a trade group report on room nights and revenues produced by
the trade group's previous conventions, which it sends to convention
bureaus and hotel chains as part of its site selection process.

I don't know if there is a similar term in the Japanese hotel
industry.

Accounts Receivable statements are prepared for billing purposes to
show the amounts owed by an AR account. Within OPERA, you can produce
AR statements for one account at a time, or in batches for several
accounts.
First, let’s learn how to prepare a statement for one account. From
the AR Account Search screen, highlight the **desired account and
select Options, then select **Statement from the Account Posting
Options screen.
The Statements screen opens displaying a grid listing the Account
Name, Account Number, Balance, plus additional Account information.
