From a patent:

「自動車やオートバイ等、趣味性が高い製品は、ユーザによってさまざまなバリエーション、オプションの組合せが指定される。」

What are some possibilities for translating "趣味性が高い製品" here?

I'd assume this applies to parts like intake/exhaust/ECU which are frequently upgraded/tuned. Frequently upgraded/tuned parts? Parts prone to user adjustment/aftermarket replacement? "Upgraded" could conceivably cover replacement or tuning, so that might be my first choice.

Without betraying confidentiality, can you provide the general context of this statement such as type of document or intended purpose? For example, is it for promoting a product, discussing various categories of products and their qualities, etc., or is it simply a generalization in a patent application? Given this sentence alone, I'm thinking along the lines of "Users can order (choose /select) and combine many variations and options for customizable products such as cars and motorcycles."

A senior person at Honda once snorted at a question I put to him about larger bikes, dismissing it as a market driven by 趣味 (the word he used) rather than practical necessity. He was probably correct.

With that as background, why not go the more literal route with something like this:

"products that are used mainly by hobbyists, such as cars and motorcycles"

But I can't see how a term as broad as 自動車 could accurately be described as a 趣味性が高い製品.

I don't think 趣味性が高い means "used mainly by hobbyists", but rather
something like "of high hedonic value", "fetish value", or perhaps
"coolness factor".

If it is in the first few paragraphs where the inventors are discussing background art, then I would revise my suggestion to: In the case of products such as automobiles and motorcycles that enable a high level of individualization based on taste/preference, users can specify/designate/order many variations and combinations of options.

Although my rendering seems much longer than the Japanese, I think this is the concept that the inventors intend to convey.

I agree with this interpretation, and I also agree with Loren Seely's suggestion of "enthusiast." And while it might not fit you context, I would be tempted to translate 指定 in this context as customize. "Automobiles, motorcycles, and other products that target enthusiasts are customized across a wide range of variations and options.

I think something along the lines of "hobbyist products," "enthusiast products," etc. would be best. I don't think 趣味性 itself is about customizability. See the below examples:
  • いや、将来のことを考えると、もっと就職に有利なクラブに入っておいた方がよかったかもしれない。占いなどという趣味性の強いクラブではなく、たとえば英語研究部とか。
  • トルストイよりもドストエフスキーの方が吾々には懐しい。ホイットマンやトラウベルの詩に趣味性としての民主化さえ見る事が出来る。実に文壇の本流は第四階級を透して正義と自由とに憧れて流れる。
  • おめでたい場所に着る礼装用の着物の模様には、縁起の良いもの、七宝・橘・鳳凰・鶴・亀などの「吉祥模様」や、昔の貴族のような豪華で華やかな模様、檜扇・宝舟・貝桶・御殿・薬玉などを表した「古典模様」が使われていることが多い。あまり趣味性の強い柄は改まった席には向かないとされる。

Working off of this suggestion, I think I may go with "products of high
enthusiast interest".

I'm a little late to the discussion, but I would suggest:
自動車やオートバイ等、趣味性が高い製品は、ユーザによってさまざまなバリエーション、オプションの組合せが指定される。
"For products that lend themselves to expressions of personal taste or preference, such as cars and motorcycles, it is common for [customers/users] to customize by choosing from various options and add-ons."

It's a bit of an 意訳, but I think the main point here is that 趣味性の高い items are those in which people tend to have specific preferences about exactly one model and color, with the carbon-fiber this and the chrome that, etc.

At "lend themselves to" .. cater to pops to mind.  Like as in "that cater to a high degree of personal taste/preference."
