I've been Googling for an hour and still can't come up with English for 杢
and 杢調. The best I can think of is "grainy"... but how does dying a
fabric give it a grainy look? Mottled? Mixed color?

Actually I found 'grandrelle yarn' for 杢糸。 Also mock twist. What is the
most common use, I wonder.....

This is my text...it's for a newly designed type of polyester:

糸染め・生地染めで杢調を表現できます。

The best explanation I found in Japanese only in a fashion dictionary, but
still no help for the English:
杢糸、杢調素材
 「杢糸」は異なった色の糸を撚り合わせたり、異なった色のトップ(羊毛独特
の生産工程の一つで、糸になる前のロープ状)を混ぜ合わせたりして、霜降り効果を
出した糸を指す。黒と白を合わせたグレー杢などが代表例。チャコールグレーなど黒
の割合を増やし、ライトグレーなら黒の比率を少なくするなど、幅広い色表現が可
能。独特の色合いや表面変化効果が人気を呼び、今秋冬物の婦人服や紳士服向け素材
でヒットしている。ただ、後染め染色や織り編み技術などでも、良く似た色合いを出
す方法が数多くある。これらを総称して「杢調素材」と呼ぶ場合が多い。ウールでは
羊毛をトップの段階で混ぜたウールトップ糸使いが、昔から主流だ。ポリエステルで
は通常のポリエステルと、染色条件の異なるカチオン可染ポリエステルを使って、濃
淡効果やカラーミックスを表現した素材が多い。

The best I could think of is a "woody shade" rather than "grainy "

This thread is a few days old, so you might have found an answer already, but "dappled" might work as well. Both it and "mottled" yield plenty of hits in Google.

BTW, thanks, Jonathan... I submitted the job this week, mostly using
"melange" and flagged it for the client and never heard back, so I guess
they dealt with it. Maybe I should ask.
