Last night I got most of my LO and buffer stage completed, crystals showed up in the mail today, and I'm sending RF across the shack.

According to my frequency counter, I can tune from 7198 to 7203. Only using about 3 turns @ about 1/16th of of inch or so inductance.

Is that the most pull I'm going to get with crystals? 

Also, I've been seriously impeded by what my junk box won't cough up. (That and finding where I left parts months ago) For the balancing pot on the mixer, the best I can do is a 500 ohm pot... How will using that alter things?

That would be about it and not all crystals can give you that wide a range.  You may want to try splitting the inductance across two coils with one for band setting and the other for tuning.
