Robotic Dishwashers And Dishwashing As A Service

Enter the robotic dishwasher. A startup named Dishcraft Robotics is developing a unit for commercial kitchens that aims to reduce reliance on human dishwashers. The video below shows it in action, picking up plates from a stack with an articulated arm and placing them in a free spot on a rotating triangular fixture. The fixture rotates the dirty plate to face down so that a specially designed scrub brush can press up against it, scrubbing food away while jets of water rinse it. The scrubbed plate rotates to an inspection station where machine vision checks the cleaning job, and if the plate passes muster, it slides down a ramp so it can be picked up by a gantry arm and moved to a drying rack.
One of those is Nala Robotics, a company that harnesses the power of artificial intelligence (AI) to automate tasks in the kitchen. The cornerstone of its technology is a one-arm, AI-powered robot that can do everything from frying wings to assembling pizza to cooking customized recipes. Announced last December, that same robotic arm technology is now capable of dishwashing, too.
Restaurants and other eateries are facing a shortage of dishwashers, and for understandable reasons -- it's inglamorous work with low pay. Dishcraft, at least, thinks robots can fill that gap. It just revealed a robotic dishwasher intended to clean large volumes of plates in commercial kitchens. Once customers stack plates on a special cart, a staffer just has to wheel that cart into the robot. From there, the machine flips the plate upside-down and uses both cold water and a brush to wipe the surface clean within seconds. AI-guided cameras then scan dishes to see if dishes need another scrub before they head to the dish rack.

To get a sense of reliability, we analyzed thousands of customer reviews using FindOurView, an AI-driven tool, and we referenced the Yale Appliance blog and J.D. Power appliance research. We spoke with service repair technicians and owners of independent appliance stores, and we also dove into online appliance forums, including Reddit.

As automation takes over kitchens, 61 percent of restaurant operators believe dishwashers can be automated with existing tech, according to a Capterra survey. Robot dishwashers could become the new norm thanks to technology coming out from Nala Robotics, which shifts the dishwashing responsibilities to Spotless, its robot dishwasher.

There are also dishwashers available in sizes according to the European gastronorm standard. Dishwashers may come in standard or tall tub designs; standard tub dishwashers have a service kickplate beneath the dishwasher door that allows for simpler maintenance and installation, but tall tub dishwashers have approximately 20% more capacity and better sound dampening from having a continuous front door.
