Brewpub Pilot Batching

Okay, so let's say hypothetically that you owned a brewpub, and you wanted to purchase a smaller system for pilot batches and specialty beers.  Assuming your hypothetical brewpub had a 7 or 10 bbl brewing system, what size would you think the pilot system should be?  Is 1 bbl too small?  Is 20 gallons too small?

10 gals would be perfect. Dogfish Head uses a 10 gal Sabco system.

I think 10gal might be a bit small. Even 20-25 gal is still a fairly cheap system to put together scale wise. The reason I say that is that it really depends on your serving keg size. 15 gal for a standard keg unless you went with 5gal Sabco. Though even with a 20 gal you don't have to brew 20. It's bad to be choked on capacity when the difference is fairly minimal at the beginning.

I would tend to agree that a half barrel (~ 15 gal) batch would be the minimum I'd want for pilot or experimental batches.  This way you could keg the full batch in a single vessel.  My interest is piqued by MoreBeer's tippy dump system, which you can get with 26G kettles.  Check it out here.
