Depends on what part of the flavor you are wanting. For the heat part put a bit into the boil along with some powdered ginger. Must of the volatiles are driven off but it keeps the ginger heat if you use enough
For the bold flavor do that after primary. I just grate mountains of it and toss it in. Doesn't take to long but it does help to use a steeping bag so you can pull it out.
Starting a big ginger beer tomorrow. Trying to keep that punch it does tend to settle out. Sounds good in a wheat.

Aahaha, you beat me to it.
That's the hardest question of all. Ginger is really variable depending on what you find. Personally I've never had enough for what I want must of the time so I've gone up to 6-8 ounces and still been fine. That's why I'm going for 8 today.

I'll have to check. This is a ginger beer coopers kit I picked up from the brew store. Going to some it with a bunch more ginger than the kit.
