Who has made a saison with this White Labs Saison Blend yeast?  I've read that it's not as attenuative as other single strains.  Anything I should know about it, i.e. does it like heat, long lag, etc.?

Cheers,

I'm currently fermenting with Wyeast 3724 Belgian Saison strain and it's a long fermentation. I'm not sure if it's the same strain you are inquiring about but if you find that it is, plan on waiting several weeks for complete fermentation. My Saison has been fermenting since 4/12/13 and it's still not fully attenuated yet. I believe Michael prefers the French Saison strain which finishes out drier and may ferment quicker.

I'm familiar with that strain, and I believe it's the Dupont strain.  The yeast I have is a blend of various strains, not as attenuative as the Dupont, and from what I've read less finicky.
